Egg Cheeseburger

  • Happy Eggs Heritage Breed Eggs (3-4 needed)
  • 1 lb ground meat

Toppings for the burger:

  • micro cilantro or sprouts
  • pickled red onions
  • tomatoes
  • butter lettuce
  • white cheddar cheese
  • buns of your choice

For The Sauce:

  • 1/4th cup ketchup
  • ½ cup mayo
  • 1 tablespoon chopped pickles
  • 1 tablespoon deli mustard
  • salt and pepper to taste

  • To begin, make your sauce by mixing ketchup, mayo, diced pickles, mustard, salt and pepper. Mix well and set aside.
  • Before starting on your cheeseburger, set up your toppings by slicing your tomatoes and getting the rest of the ingredients ready for assembling.
  • Heat a skillet with a drizzle of vegetable oil and fry your egg sunny side up until it’s fully cooked and crispy on the edges – about 4-5 minutes, set aside.
  • In the same skillet, add more vegetable oil. Form your patties and place on the skillet with salt and pepper. Once charred on one side (about 3-5 minutes) flip and add your cheese. Cover your skillet to steam and melt the cheese. Once the other side of the burger is charred and cooked, remove and start to assemble your burger.
  • Toast your buns (optional), add on your spread, lettuce, tomatoes, the cheeseburger, pickled red onions, micro greens or sprouts and top with your fried egg. Serve!
